Make-Ahead Candied Carrots

  • 3 lb. carrots, peeled
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 3 tbsp. orange juice concentrate
  • 1/4 tsp. salt


Cut carrots into 1-inch chunks. Boil in salted water for 5 minutes; drain. Mix carrots while hot with butter, brown sugar, juice concentrate and salt. Transfer to a buttered 2-quart baking dish. Recipe may be covered and refrigerated for up to 2 days at this point.

When ready to bake, preheat oven to 350°F. Bake, covered, for 30 minutes. Uncover and bake for 15 minutes more.
