Spinach Salad with Nectarines and Raspberries

Ingredients:

  • 4 C. fresh spinach, washed, stems removed
  • 5 nectarines, pitted and sliced
  • 1/4 red onion, sliced
  • 1 pint raspberries
  • 1 T. olive oil
  • 1/4 C. raspberry vinegar
  • 1/2 T. lemon juice
  • 1/2 C. orange juice
  • salt and black pepper


Preparation:

In small bowl, whisk olive oil,vinegar,lemon juice,orange juice.Divide spinach amoung 4 salad plates. Place nectarine slices, red onion slices and raspberries on top. Drizzle dressing over salads, and serve.
