Spinach Salad with Nectarines and Raspberries
Servings: 4
Ingredients:
- 4 C. fresh spinach, washed, stems removed
- 5 nectarines, pitted and sliced
- 1/4 red onion, sliced
- 1 pint raspberries
- 1 T. olive oil
- 1/4 C. raspberry vinegar
- 1/2 T. lemon juice
- 1/2 C. orange juice
- salt and black pepper
Preparation:
In small bowl, whisk olive oil,vinegar,lemon juice,orange juice.Divide spinach amoung 4 salad plates. Place nectarine slices, red onion slices and raspberries on top. Drizzle dressing over salads, and serve. Values per serving: Calories: 175, Total Fat: 9 g Fiber: 5 g
