Quinoa with Pecans

  • 1 box Quinoa (12 oz), cooked per pkg directions (4 cups cooked)
  • 1 Tbsp olive oil
  • 1 cup pecans, chopped
  • 1 cup chopped vegetables
  • 2 Tbsp butter
  • 2 Tbsp Oil


Heat olive oil on MEDIUM-LOW in large skillet; toast pecans, stirring frequently, 3-5 min, until slightly brown. Remove and set aside.

Add vegetables to pan; cook, stirring, 5 min. Add butter and basting oil to pan. Stir in Quinoa and pecans to heat through, 2-3 min. Serve.
