High-Fiber, Low Fat Pancakes
Combine buttermilk, oats and wheat bran in a large bowl. Let stand 5 minutes. Add egg and beat until blended.
In small bowl, mix whole wheat flour, sugar, baking soda and salt. Add to the bran mixture and blend until flour is moistened.
Prepare a hot skillet with nonstick pan spray. Pour in about 1/4 cup batter for each pancake. Cook about 3 minutes or until bubbles form on top. Turn and cook about 2 minutes more.
