Pomegranate and Fig Compote

  • 1 cup pomegranate juice
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon pure vanilla extract
  • 1 teaspoon shredded orange zest
  • 2 pears, peeled and cut into bite-sized pieces
  • 1 cup dried figs, quartered
  • 1 cup dried cranberries


1. Combine pomegranate juice, brown sugar, cinnamon, allspice, vanilla, and orange zest in a medium saucepan. Heat to a boil over medium heat.

2. Add pears, figs and cranberries, simmer 5 minutes, or until cranberries are plump and liquid is slightly thickened. Serve warm or cover and refrigerate until serving.

Try it as a topping on pound cake, angel food cake, or ice cream.
