Pomegranate and Fig Compote
Servings: 12
Ingredients:
- 1 cup pomegranate juice
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon pure vanilla extract
- 1 teaspoon shredded orange zest
- 2 pears, peeled and cut into bite-sized pieces
- 1 cup dried figs, quartered
- 1 cup dried cranberries
Preparation:
1. Combine pomegranate juice, brown sugar, cinnamon, allspice, vanilla, and orange zest in a medium saucepan. Heat to a boil over medium heat. 2. Add pears, figs and cranberries, simmer 5 minutes, or until cranberries are plump and liquid is slightly thickened. Serve warm or cover and refrigerate until serving.
